In this Foodie Friday I got my hands on a deliciously tasty treat that is not totally bad for you. In using healthier alternative ingredients you can still curb that sweet craving but you don't have to have all the sugars and fats that we usually associate with sweet foods.
I have used a recipe designed by Simon Roshdy of The Diet Kitchen and made by Alyssia Sheikh of Mind Over Munch. I will have both Simon and Alyssia's social media and where you can find them linked at the bottom of this post, so make sure to check it out.
What I loved about this recipe is that it is:

Refined sugar-free
Dairy-free
Gluten-free

Ingredients
1 cup packed, fresh pitted dates
2 tbsp unsweetened peanut butter
2 tbsp tahini
1 tbsp coconut oil
1 tsp vanilla extract
Pinch of salt
Method:
- Add dates, peanut butter, tahini, coconut oil, vanilla extract & salt into food processor and blend until creamy.
- Line a loaf pan with cling-film or baking paper. Spoon the mixture in and smooth the top.
- Sprinkle salt over mixture to taste & put in the freezer for a couple of hours to set.
- Once your mixture has set cut it into cubes.
- Store in freezer in an airtight container.
